For those who have a disability that inhibits your cooking skills, I have just the thing to help adapt your kitchen without spending oodles of money on renovations. All you need is a toaster oven! I have collected a few of my favorite recipes for you and listed them below.


Sweet Corn Quesadilla

Yield: Makes 4 servings

Recipe Time

Prep Time: 5 Minutes

8 small (or fajita-style) tortillas

2 teaspoons olive oil

1 1/2 cups (6 ounces) grated Monterey Jack

1/2 small red onion, thinly sliced

2 cups corn kernels (fresh, or frozen and thawed)

2 jalapenos, seeded and finely chopped

1/2 cup fresh cilantro leaves

Sour cream and salsa (optional)


Heat toaster oven to 400° F.

Brush one side of each tortilla with the oil. Turn 4 of the tortillas over and top with the Monterey Jack, onion, corn, jalapenos, and cilantro. Sandwich with the remaining tortillas, oiled-side up.

Working in batches, transfer the quesadillas to a foil-lined toaster-oven tray. Bake, turning once, until the cheese melts, 6 to 8 minutes total. Serve with the sour cream and salsa (if using).

Greek Frittata

Yield: Makes 4 servings

3 tablespoons olive oil

10 large eggs

2 teaspoons kosher salt

1/2 teaspoon black pepper

1 5-ounce bag baby spinach

1 pint grape tomatoes, halved

4 scallions (white and green parts), thinly sliced

8 ounces Feta, crumbled


Heat toaster oven to 350° F.

Add the oil to a 2-quart casserole and transfer to oven for 5 minutes.

Meanwhile, in a bowl, whisk together the eggs, salt, and pepper. Add the spinach, tomatoes, and scallions and combine. Gently stir in the Feta.

Remove casserole from oven. Pour the egg mixture into casserole. Bake until the frittata is browned around the edges and slightly puffed and a knife comes out clean, 25 to 30 minutes.

Fish and Chips

Yield: Makes 4 servings


1 ¾ pounds red or Yukon gold potatoes, cut into 1-inch chunks

4 tablespoons olive oil

1 ¼ teaspoons kosher salt

1 ¼ teaspoons black pepper

8 sprigs fresh thyme

4 (6-ounce) pieces cod or any flaky white fish

1 lemon, halved

1 clove garlic, thinly sliced

2 tablespoons capers, drained


Heat toaster oven to 450° F.

Place the potatoes, 2 tablespoons of the oil, 1 teaspoon of the salt, ¼ teaspoon of the pepper, and 4 sprigs of the thyme in the toaster-oven baking tray and toss. Spread in a single layer and bake, stirring occasionally, until golden, 25 to 30 minutes. Transfer to a large piece of aluminum foil and wrap to keep warm. Wipe out tray. Place the cod in tray.

Thinly slice half the lemon using a mandolin. Top the cod with the lemon slices, garlic, capers, and the remaining salt, pepper, and thyme sprigs. Drizzle with the remaining oil. Bake until cooked through, 8 to 12 minutes, depending on size.

Transfer the cod and potatoes to individual plates. Squeeze the remaining lemon half over the tray and return to oven until the juices are warmed through, about 5 minutes. Pour the sauce over the fish and potatoes.
